Happy Thanksgiving!
Grumpy-ish outward appearances notwithstanding, I am truly grateful for God's goodness, mercy and generous provision for me and my family. I am so glad He doesn't give me what I truly deserve.
I am also thankful for white trash food... here's a recipe I'm going to try out today. Not our usual Thanksgiving dinner faire here, but it's calling out to my inner "potluck maven":
Hash Brown Potato Cheddar Casserole
INGREDIENTS:
* 1/2 1/4 cup butter
* 1 (32 oz.) pkg shredded frozen potatoes, thawed
* 1 cup sour cream
* 1 bunch green onions (6 to 8) (2 or 3), chopped*
* 1 1/2 teaspoons salt
* 12 oz grated cheddar cheese (the more the merrier, I say)
PREPARATION:
Melt butter in baking dish (9"x13"); mix thawed hash browns into melted butter.
Mix together sour cream, onions, salt and cheese then pour over potatoes; blend well.
Bake uncovered at 350° for 45 minutes (or you can try 425° for 25 minutes).
Serves 24 children, 12 adults or 2 lumberjacks.

Alas, I ate no turkey today. I did, however, spend the day with a bunch of little turkeys!! I hope you eat soon!!!

re: the recipe - you can't "pour" the cheesy mixture over the potatoes (too thick)... just mix it all up and throw it in the oven
I have an update for the recipe. I'm going to call it "Loaded Baked Potato Casserole".
In addition the ingredients already mentioned, throw in some crisp bacon (chopped) to the mix. After all ingredients are mixed and spread into pan, sprinkle more grated cheese and bacon bits on top. Bake and EAT!!
